Mixer with bowl and paddle attachment
13x9x2-inch baking pan
- Ingredients
1 cup (226 g) butter, softened (regular or vegan)
3 oz. (85.1 g) cream cheese, softened
2 cups (400 g) granulated sugar
3 eggs (150 g)
1 teaspoon (4.7 g) vanilla extract
½ teaspoon (1.4 g) coffee extract
- Dry Ingredients – Whisk together
1cup (120 g) all-purpose flour
¾ cup (63 g) cocoa *See note below.
½ teaspoon (1.2 g) espresso powder
¼ teaspoon (1 g) baking powder
½ teaspoon (3 g) salt
- Mix-Ins
¾ cup (127.5 g) mini chocolate chips
Directions
- Heat oven to 325°F.
- Prepare 13x9x2-inch baking pan by lining it with parchment paper, leaving enough paper to lift brownies out of pan.
- In medium-sized bowl, whisk together flour, cocoa, espresso powder, cocoa, and salt. Set aside.
- Using a paddle attachment, beat butter and cream cheese until light and fluffy (approximately 4 minutes on medium speed). Use spatula to scrape bottom and sides of bowl.
- Add eggs and vanilla. Beat until no egg yolk can be seen (approximately 1 minute on medium speed). Use spatula to scrape bottom and sides of bowl.
- With mixer on low, gradually add dry ingredients and mix just until blended.
- With mixer on low, add mini chocolate chips and mix until morsels are distributed through batter.
- Using spatula, spread batter in prepared pan.
- Bake 40 to 45 minutes or just until brownies begin to pull away from sides.
- Cool completely in pan, and then lift brownies out using parchment paper.
- Cut into squares and enjoy!
Notes
- I use 50 grams of regular cocoa powder and 13 grams of Dutch process cocoa powder.
