What You’ll Need

  • 13x9x2-inch baking pan

  • Parchment Paper

  • Spatula

  • Ingredients
  • 1 cup (226 g) butter, softened (regular or vegan)

  • 3 oz. (85.1 g) cream cheese, softened

  • 2 cups (400 g) granulated sugar

  • 3 eggs (150 g)

  • 1 teaspoon (4.7 g) vanilla extract

  • ½ teaspoon (1.4 g) coffee extract

  • Dry Ingredients – Whisk together
  • 1cup (120 g) all-purpose flour

  • ¾ cup (63 g) cocoa *See note below.

  • ½ teaspoon (1.2 g) espresso powder

  • ¼ teaspoon (1 g) baking powder

  • ½ teaspoon (3 g) salt

  • Mix-Ins
  • ¾ cup (127.5 g) mini chocolate chips

Directions

  • Heat oven to 325°F.
  • Prepare 13x9x2-inch baking pan by lining it with parchment paper, leaving enough paper to lift brownies out of pan.
  • In medium-sized bowl, whisk together flour, cocoa, espresso powder, cocoa, and salt. Set aside.
  • Using a paddle attachment, beat butter and cream cheese until light and fluffy (approximately 4 minutes on medium speed). Use spatula to scrape bottom and sides of bowl.
  • Add eggs and vanilla. Beat until no egg yolk can be seen (approximately 1 minute on medium speed). Use spatula to scrape bottom and sides of bowl.
  • With mixer on low, gradually add dry ingredients and mix just until blended.
  • With mixer on low, add mini chocolate chips and mix until morsels are distributed through batter.
  • Using spatula, spread batter in prepared pan.
  • Bake 40 to 45 minutes or just until brownies begin to pull away from sides.
  • Cool completely in pan, and then lift brownies out using parchment paper.
  • Cut into squares and enjoy!

Notes

  • I use 50 grams of regular cocoa powder and 13 grams of Dutch process cocoa powder.
